onion chutney



Onion garlic chutney is a good companion for idly, dosa and for even chapathis .

Let us see as to how to prepare this tasty chutney.

All we need is 

1. Sambar/ pearl onions- - 4 or 5 .( also you can use the big onions)
2.Tomatoes-- 2 ( also you can use tamarind )
3.Red chillies-- 4 or 5 or as per your taste.
4.Salt to taste.
5.Oil - 1 tea spon.
6.Mustard -- a little to garnish.


Preparing instructions:

Peel the onion. If the onions are big, cut them into 2 or 4 pieces.

First heat the oil in a pan. Add the red chillies. Fry them and keep aside. Now add the  cut onion and tomatoes and fry them only for a few minutes. Do not over fry them. Remove them from the frying pan much before they become translucent.

Take the moxie jar. Add the fried chillies and add salt. Grind into a fine powder. Then add the fried onion and tomato and grind them into a coarse paste. Again take care not to grind into a fine paste. The texture does make a difference in the taste of the chutney.

Now garnish it with mustard. Your chutney is ready.
 Serve the chutney with lots of love. That sure will enhance the taste. You are sure to be praised by your husband and family.

Saravana Bhavan sambhar.;

I came across this sambar recipe in ' balhanuman'blog. I tried it out . That was extremely good. Let me share the recipe.

Let us see how to prepare.


Pressure  cook .


Toor dal 1/2 cup.
Tomato --1 
Onion---1 or 2.

Put all the above ingredients in a pressure cooker  and allow three or four whistles , so that  the ingredients get  fully cooked.  Smash the cooked, dhal, onion and tomato  and keep it aside.

Grind

Fried gram (Pottu kadalai)--1 spoon.
grated coconut                ---- 1 spoon.
Sambhar powder ----to your taste.
Turmeric Powder-----1/4  spoon.
Tomato     -------1.

Grind the fried gram, coconut, sambhar powder, turmeric powder to a fine powder and then add the tomato (cut it.) and grind the mixture to a fine paste. keep it aside.

Garnish:

Oil a little.
Mustard a little.
Cumin seeds (jeera) a little.
Methi seeds a little.
Curry leaves.
cut 1 onion to pieces.

Tamarind juice a little.( you can dilute it )
salt to your taste.
You can add any vegetable of your choice.( Pearl onions, sambhar onions, drumstick,,etc,,,,)

Cooking Instructions :

Pour oil in a pan. Heat it. Add the Mustard seeds, cumin, methi seeds.( methi seeds tend to  burn black  quickly.) Take care to see that the methi seeds turn Only red. When red, add the cut onions. Pour the diluted tamarind juice. Add the cut vegetable  and cook in low fire for a few minutes. Then add the smashed dhal-tomato-onion combo and the ground paste in the sambhar. Add salt. Bring it to a boil.
Taste it. If need be add some more salt/ sambhar powder.Take care to boil it for a few minutes only.otherwise, you will end up with kothsu, and not sambhar.

When it reaches the required consistency, remove from fire. add coriander leaves on top .

Your tasty Sambhar is ready.This sambhar will go well with idly, dosa pongal.......

Here  is a secret to make your  sambhar yummy. Just serve it with lots of  love and affection.
That does wonders . Trust me.

Onion Powder / Podi




To make the onion powder all we need is

1. A handful of small/sambar/pearl onions.

2. A tumbler of Sambardhal/toor dhal.
 (Always see that the quantity of dhal is more than the  onions, to have a desirable texture of the powder.)

3. Red Chillies  as per your taste.
4. Asafoetida  a pinch.
Salt as per your taste.
A spoon of  oil to fry .

Heat the oil in a pan. Fry the asafoetida, dhal, red chillies till they are  red.
Fry the onions a little.(Take care to see that the onions don't get fried up a lot.  If the onions get fried up a lot , you will end up with onion chutney and not podi.)

First powder the fried dhal. asafoetida, chillies, salt to a  fine powder. Then add the fried onions  to this powder and let the mixie run roughly  for about 45 seconds only .(Again take care to see that you don't grind the onions and the mixture to a paste.)



Stir it with a spoon and store it in glass jars. You can keep it referigerated.
Add this powder to hot rice. Add a little gingelly oil ,mix it and eat.
You are sure to like its taste. Yummy!!
